The men are chosen for this work in their home countries based on the size and softness of their hands. A large heavily padded and soft palm is prized as it is much less likely to bruise the fruit as it is picked. If an apple is blemished it is no longer a table apple, which fetches a higer price, but becomes a cider apple, at a much lower price.
